- 8 corn or flour tortillas
- 2 cups red enchilada sauce
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 medium yellow onion, diced
- 3 cloves fresh garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
Instructions
- In a skillet, brown the ground beef over medium heat. Add diced onion and minced garlic; cook until the onions are translucent.
- Stir in cumin, chili powder, and half of the red enchilada sauce. Simmer for 5 minutes.
- Spoon filling into each tortilla, roll tightly, and place seam-side down in a greased baking dish.
- Pour remaining red sauce over the rolled tortillas and sprinkle cheese on top.
- Bake at 375°F (190°C) for 20 minutes until bubbly and golden brown.
- Let cool slightly before serving; garnish with fresh cilantro or avocado slices.
