Ingredients

  • 1 lb lean ground beef
  • 8 corn or flour tortillas
  • 2 cups red enchilada sauce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium yellow onion, diced
  • 3 cloves fresh garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions

  1. In a skillet, brown the ground beef over medium heat. Add diced onion and minced garlic; cook until the onions are translucent.
  2. Stir in cumin, chili powder, and half of the red enchilada sauce. Simmer for 5 minutes.
  3. Spoon filling into each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  4. Pour remaining red sauce over the rolled tortillas and sprinkle cheese on top.
  5. Bake at 375°F (190°C) for 20 minutes until bubbly and golden brown.
  6. Let cool slightly before serving; garnish with fresh cilantro or avocado slices.
