Ingredients

  • 2 cups fresh corn (or 1 can of corn, drained)
  • 1 cup ripe tomatoes, diced
  • ½ cup red onion, finely chopped
  • ¼ cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1 medium jalapeño pepper, diced (seeds removed for less heat)
  • Salt and pepper to taste

Instructions

  1. Rinse and prepare all the fresh ingredients.
  2. If using fresh corn, cut the kernels off the cob and place them in a bowl.
  3. Dice the tomatoes, red onion, and jalapeños; add to the bowl with corn.
  4. Stir in chopped cilantro and freshly squeezed lime juice.
  5. Season with salt and pepper; mix until well combined.
  6. Cover and refrigerate for at least 30 minutes to allow flavors to meld before serving.
