- 1 lb lean ground beef
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) sweet corn, drained
- 1 can (14.5 oz) diced tomatoes (preferably fire-roasted)
- 1 cup shredded cheddar cheese
- 1 tsp cumin
- 1 tsp chili powder (adjust to taste)
- 1 bell pepper, diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat for 6-8 minutes. Drain excess fat.
- Add diced onions and minced garlic; sauté until fragrant, about 2-3 minutes.
- Transfer the beef mixture to a slow cooker and combine with black beans, corn, diced tomatoes, bell peppers, cumin, chili powder, salt, and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until heated through.
- About 30 minutes before serving, sprinkle cheddar cheese on top and cover until melted.
- Serve hot with tortilla chips for extra crunch.
