  • 1 lb lean ground beef
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) sweet corn, drained
  • 1 can (14.5 oz) diced tomatoes (preferably fire-roasted)
  • 1 cup shredded cheddar cheese
  • 1 tsp cumin
  • 1 tsp chili powder (adjust to taste)
  • 1 bell pepper, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat for 6-8 minutes. Drain excess fat.
  2. Add diced onions and minced garlic; sauté until fragrant, about 2-3 minutes.
  3. Transfer the beef mixture to a slow cooker and combine with black beans, corn, diced tomatoes, bell peppers, cumin, chili powder, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until heated through.
  5. About 30 minutes before serving, sprinkle cheddar cheese on top and cover until melted.
  6. Serve hot with tortilla chips for extra crunch.
