  • 8 oz penne pasta
  • 2 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 cup zucchini, diced
  • 1 cup bell peppers, diced
  • 4 cups low-sodium vegetable broth
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup fresh basil or parsley, chopped

Instructions

  1. In a large pot over medium heat, add olive oil and sauté minced garlic until fragrant.
