  • 1 cup dried red beans (soaked overnight)
  • 12 oz Andouille sausage (diced)
  • 1 medium onion (chopped)
  • 1 green bell pepper (chopped)
  • 2 celery stalks (chopped)
  • 4 garlic cloves (minced)
  • 1/4 tsp cayenne pepper (adjust to taste)
  • 2 bay leaves
  • 4 cups low-sodium chicken broth
  • 1 cup long-grain white rice

Instructions

  1. In a large pot, heat oil over medium heat. Sauté onions, bell peppers, and celery for about 5 minutes until softened.
  2. Add minced garlic and diced sausage; cook for another 3-4 minutes until browned.
  3. Stir in soaked red beans, cayenne pepper, and bay leaves. Mix well.
  4. Pour in chicken broth to cover the mixture by about an inch. Bring to a simmer while stirring occasionally.
  5. Reduce heat to low and simmer uncovered for about 1.5 hours or until beans are tender, stirring occasionally.
  6. Cook rice according to package instructions separately.
  7. Serve spoonfuls of the bean mixture over a mound of rice.
