Description

  • 1.5 pounds small potatoes (Yukon Gold or red)
  • 3 tablespoons extra-virgin olive oil

  • 1 tablespoon fresh rosemary or thyme (chopped)

Instructions

  1. Boil the potatoes in salted water for 15-20 minutes, until fork-tender.

  4. Gently smash each potato using the bottom of a glass until flat but intact.
