Description

Beef Enchiladas are a delicious and comforting Mexican classic that transforms any meal into a festive occasion. Each warm tortilla is filled with savory ground beef, drizzled in zesty enchilada sauce, and topped with melted cheese.   • 1 lb lean ground beef
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 medium onion, chopped
  • 2 cups enchilada sauce (mild or spicy)
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt to taste
  • For Garnish: ½ cup sour cream, ¼ cup fresh cilantro, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef with chopped onions until tender. Drain excess fat.
  3. Add chili powder, cumin, garlic powder, and salt; mix well.
  4. Fill each tortilla with about two tablespoons of the beef mixture and roll tightly.
  5. Place seam-side down in a greased baking dish. Pour enchilada sauce over the top and sprinkle with cheese.
  6. Bake for 20-25 minutes or until bubbly and golden.
  7. Serve hot with sour cream and cilantro.
