- 8 corn tortillas
- 2 cups shredded cheddar cheese
- 1 medium onion, chopped
- 2 cups enchilada sauce (mild or spicy)
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- Salt to taste
- For Garnish: ½ cup sour cream, ¼ cup fresh cilantro, chopped
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet over medium heat, brown the ground beef with chopped onions until tender. Drain excess fat.
- Add chili powder, cumin, garlic powder, and salt; mix well.
- Fill each tortilla with about two tablespoons of the beef mixture and roll tightly.
- Place seam-side down in a greased baking dish. Pour enchilada sauce over the top and sprinkle with cheese.
- Bake for 20-25 minutes or until bubbly and golden.
- Serve hot with sour cream and cilantro.
