  • 1 lb boneless chicken breast
  • 2 medium jalapeños
  • 8 oz cream cheese
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 garlic cloves
  • 2 tbsp olive oil
  • Cajun seasoning to taste
  • Chopped green onions for garnish

Instructions

  1. Cook the penne pasta in salted boiling water according to package instructions until al dente (10-12 minutes). Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken breast and cook until golden brown (7-8 minutes).
  3. Stir in minced garlic and chopped jalapeños, sautéing for 1-2 minutes until fragrant.
  4. Reduce heat, then add cream cheese and heavy cream, stirring until smooth.
  5. Mix in Cajun seasoning, salt, and pepper to taste.
  6. Combine the cooked pasta with the sauce in the skillet, tossing until evenly coated.
