- 1 green bell pepper, sliced
- 1 large onion, sliced
- 2 tablespoons olive oil (divided)
- Juice of 2 limes
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a bowl, whisk together lime juice, 1 tablespoon olive oil, garlic powder, cumin, salt, and pepper to create the marinade.
- Place the flank steak in a resealable bag or dish and pour the marinade over it. Seal and refrigerate for at least 1 hour (or overnight for best results).
- While the steak marinates, slice the bell peppers and onion into thin strips.
- Heat a skillet over medium-high heat. Add the remaining tablespoon of olive oil.
- Remove steak from marinade (discard marinade) and sear in the hot skillet for about 4-5 minutes on each side until browned but juicy.
- After cooking, let the steak rest before slicing it thinly against the grain.
- Sauté the sliced vegetables in the same skillet for about 3-4 minutes until softened but still crisp.
- Serve warm with tortillas and desired toppings like sour cream or guacamole.
