  • 1 pound flank steak
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 2 tablespoons olive oil (divided)
  • Juice of 2 limes
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together lime juice, 1 tablespoon olive oil, garlic powder, cumin, salt, and pepper to create the marinade.
  2. Place the flank steak in a resealable bag or dish and pour the marinade over it. Seal and refrigerate for at least 1 hour (or overnight for best results).
  3. While the steak marinates, slice the bell peppers and onion into thin strips.
  4. Heat a skillet over medium-high heat. Add the remaining tablespoon of olive oil.
  5. Remove steak from marinade (discard marinade) and sear in the hot skillet for about 4-5 minutes on each side until browned but juicy.
  6. After cooking, let the steak rest before slicing it thinly against the grain.
  7. Sauté the sliced vegetables in the same skillet for about 3-4 minutes until softened but still crisp.
  8. Serve warm with tortillas and desired toppings like sour cream or guacamole.
