  • 1 box (6 oz) Stove Top stuffing mix
  • 2 large eggs
  • 1 medium onion, finely chopped (about 1 cup)
  • 1/2 cup ketchup (plus extra for glazing)
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a baking dish by lining it with parchment paper or greasing it lightly.
  2. In a skillet over medium heat, sauté the chopped onions in olive oil until soft and translucent (about 5 minutes).
  3. In a large mixing bowl, combine ground beef, sautéed onions, Stove Top stuffing mix, eggs, ketchup, garlic powder, salt, and pepper. Mix gently until combined.
  4. Shape the mixture into a loaf and place it in the prepared baking dish. Smooth the top.
  5. Glaze the top of the meatloaf with additional ketchup.
  6. Bake for about 60 minutes or until the internal temperature reaches at least 160°F (70°C). Let rest for 10 minutes before slicing.
