- 1 whole chicken (3–4 lbs)
- 2 cups basmati rice
- 2 medium onions, finely chopped
- 4 garlic cloves, minced
- 2 tomatoes, diced (fresh or canned)
- 1 cinnamon stick
- 4 cardamom pods
- 1 tsp cumin seeds
- 2 tsp coriander powder
- 4 tbsp cooking oil (ghee recommended)
- Salt to taste
Instructions
- 1. Prep ingredients: Clean and dry the chicken; chop onions and garlic.
- 2. Sauté onions: Heat oil in a large pot over medium heat; sauté onions until golden brown, then add garlic until fragrant.
- 3. Brown the chicken: Add chicken to the pot; sear on all sides until golden brown.
- 4. Add tomatoes and spices: Stir in diced tomatoes, cinnamon stick, cardamom pods, cumin seeds, and coriander powder; cook for about 10 minutes.
- 5. Cook rice: Remove chicken temporarily; add rinsed basmati rice and enough water/broth (usually double the amount of rice). Nestle chicken back on top.
- 6. Simmer: Cover tightly and simmer on low for about 25 minutes until both chicken and rice are cooked through.
