  • 1 whole chicken (34 lbs)
  • 2 cups basmati rice
  • 2 medium onions, finely chopped
  • 4 garlic cloves, minced
  • 2 tomatoes, diced (fresh or canned)
  • 1 cinnamon stick
  • 4 cardamom pods
  • 1 tsp cumin seeds
  • 2 tsp coriander powder
  • 4 tbsp cooking oil (ghee recommended)
  • Salt to taste

Instructions

  1. 1. Prep ingredients: Clean and dry the chicken; chop onions and garlic.
  2. 2. Sauté onions: Heat oil in a large pot over medium heat; sauté onions until golden brown, then add garlic until fragrant.
  3. 3. Brown the chicken: Add chicken to the pot; sear on all sides until golden brown.
  4. 4. Add tomatoes and spices: Stir in diced tomatoes, cinnamon stick, cardamom pods, cumin seeds, and coriander powder; cook for about 10 minutes.
  5. 5. Cook rice: Remove chicken temporarily; add rinsed basmati rice and enough water/broth (usually double the amount of rice). Nestle chicken back on top.
  6. 6. Simmer: Cover tightly and simmer on low for about 25 minutes until both chicken and rice are cooked through.
