  • 1 lb boneless, skinless chicken breasts
  • 1 cup raw unsalted cashews
  • 1 tbsp fresh ginger, grated
  • 4 garlic cloves, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp vegetable oil (canola or peanut)
  • 1 cup bell peppers, sliced (any color)
  • 2 green onions, sliced thinly
  • 2 tsp cornstarch
  • 1/2 cup chicken broth

Instructions

  1. Cut the chicken into bite-sized pieces and set aside.
  2. In a bowl, mix soy sauce, minced garlic, grated ginger, and cornstarch until smooth.
  3. Heat vegetable oil in a large pan over medium-high heat. Add the marinated chicken and cook until golden brown, about 6-8 minutes.
  4. Add bell peppers to the pan and sauté until slightly softened.
  5. Pour in the chicken broth while scraping up any browned bits from the pan. Simmer until thickened.
  6. Stir in roasted cashews just before serving.
