  • 1.5 lbs bone-in chicken thighs
  • 2 cups basmati rice
  • 2 medium onions (thinly sliced)
  • 2 tbsp garlic-ginger paste
  • 1 cup tomatoes (chopped)
  • 1 tsp cumin seeds
  • 4 cardamom pods
  • 1 cinnamon stick
  • 2 bay leaves
  • 10 strands saffron (soaked in 2 tbsp warm milk)
  • ¼ cup cilantro (chopped)
  • ¼ cup mint leaves (chopped)
  • Salt to taste
  • Ghee or oil for cooking

Instructions

  1. Marinate chicken thighs with yogurt, garlic-ginger paste, salt, and spices; set aside for at least 30 minutes.
  2. In a large pot, heat ghee or oil over medium heat. Add sliced onions and cook until golden brown.
  3. Stir in cumin seeds and cardamom pods; add marinated chicken and cook until it turns white and fragrant.
  4. Incorporate chopped tomatoes; cook until softened.
  5. Rinse basmati rice until water runs clear. Partially cook in boiling salted water for about 5 minutes; drain.
  6. Layer partially cooked rice over the chicken mixture; drizzle saffron milk on top.
  7. Cover tightly, reduce heat to low, and steam for 25-30 minutes until rice absorbs flavors.
