- 2 ripe avocados
- 4 large flour tortillas
- 1 cup shredded cheese (Cheddar or Monterey Jack)
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 2 tsp olive oil
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
- Sour cream or Greek yogurt (optional)
Instructions
- Heat olive oil in a skillet over medium-high heat. Season chicken breasts with salt, pepper, cumin, and paprika. Sear for about 6-7 minutes per side until golden brown and cooked through. Remove from heat and let rest.
- While chicken rests, dice avocados and toss with lime juice and cilantro in a bowl.
- Shred the cooked chicken using two forks and combine it with the avocado mixture.
- Lay out a tortilla on a flat surface, place some of the chicken-avocado filling and shredded cheese in the center. Roll tightly while tucking in the edges.
- In the same skillet, place each burrito seam side down and cook until golden brown on all sides—about 2-3 minutes per side.
