  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 ripe avocados
  • 4 large flour tortillas
  • 1 cup shredded cheese (Cheddar or Monterey Jack)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tsp olive oil
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Sour cream or Greek yogurt (optional)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season chicken breasts with salt, pepper, cumin, and paprika. Sear for about 6-7 minutes per side until golden brown and cooked through. Remove from heat and let rest.
  2. While chicken rests, dice avocados and toss with lime juice and cilantro in a bowl.
  3. Shred the cooked chicken using two forks and combine it with the avocado mixture.
  4. Lay out a tortilla on a flat surface, place some of the chicken-avocado filling and shredded cheese in the center. Roll tightly while tucking in the edges.
  5. In the same skillet, place each burrito seam side down and cook until golden brown on all sides—about 2-3 minutes per side.
  6. Serve warm with sour cream or Greek yogurt.
