  • 8 oz beef sirloin, thinly sliced
  • 6 oz flat rice noodles
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 cup bell peppers, sliced
  • 1 cup bok choy, chopped
  • 1 tbsp curry powder
  • 1 tsp chili flakes (adjust to taste)
  • Juice of 1 lime

Instructions

  1. Gather all ingredients and slice the beef, chop the vegetables, and measure out the spices.
  2. Soak rice noodles in hot water for about 10 minutes until softened; drain and set aside.
  3. In a large pot over medium heat, add oil and sauté garlic and ginger until fragrant (about 1 minute).
  4. Add sliced beef along with curry powder and chili flakes; cook for about 3–4 minutes until browned.
  5. Pour in coconut milk and enough water or broth to cover; bring to a gentle simmer.
  6. Stir in soaked noodles and chopped vegetables; cook until heated through.
  7. Serve hot with lime wedges or fresh herbs.
