- 8 oz beef sirloin, thinly sliced
- 6 oz flat rice noodles
- 1 can (13.5 oz) full-fat coconut milk
- 1 tbsp fresh ginger, minced
- 3 cloves garlic, minced
- 1 cup bell peppers, sliced
- 1 cup bok choy, chopped
- 1 tbsp curry powder
- 1 tsp chili flakes (adjust to taste)
- Juice of 1 lime
Instructions
- Gather all ingredients and slice the beef, chop the vegetables, and measure out the spices.
- Soak rice noodles in hot water for about 10 minutes until softened; drain and set aside.
- In a large pot over medium heat, add oil and sauté garlic and ginger until fragrant (about 1 minute).
- Add sliced beef along with curry powder and chili flakes; cook for about 3–4 minutes until browned.
- Pour in coconut milk and enough water or broth to cover; bring to a gentle simmer.
- Stir in soaked noodles and chopped vegetables; cook until heated through.
- Serve hot with lime wedges or fresh herbs.
