  • 1 cup bulgur wheat
  • 2 cups fresh parsley, finely chopped
  • 1 cup ripe tomatoes, diced
  • 1 cup cucumber, diced
  • ½ cup fresh mint leaves, chopped
  • Juice of 2 lemons
  • ½ cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse bulgur wheat under cold water and soak in 2 cups of water for about 30 minutes until fluffy. Drain excess water if necessary.
  2. While bulgur is soaking, chop parsley, tomatoes, and cucumber into fine pieces.
  3. Add chopped mint to the vegetable mixture.
  4. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  5. In a large bowl, combine soaked bulgur with vegetables and herbs. Pour dressing over the salad and mix well.
  6. Chill in the refrigerator for at least one hour before serving.
