Ingredients
- 1 cup bulgur wheat
- 2 cups fresh parsley, finely chopped

- Salt and pepper to taste
Instructions
- Rinse bulgur wheat under cold water and soak in 2 cups of water for about 30 minutes until fluffy. Drain excess water if necessary.
- While bulgur is soaking, chop parsley, tomatoes, and cucumber into fine pieces.
- Add chopped mint to the vegetable mixture.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
- In a large bowl, combine soaked bulgur with vegetables and herbs. Pour dressing over the salad and mix well.
- Chill in the refrigerator for at least one hour before serving.
