Ingredients

  • 1 can chickpeas (15 oz), rinsed and drained
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the chickpeas to remove excess sodium.
  2. Dice the cucumber and cherry tomatoes into bite-sized pieces. Finely chop the red onion and parsley.
  3. In a small bowl, whisk together lemon juice and olive oil. Season with salt and pepper to taste.
