- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/2 cup crumbled feta cheese

- 2 tbsp fresh lemon juice
- Salt and pepper to taste
Instructions
- Wash and prepare all vegetables: dice cucumber and halve cherry tomatoes.
- Thinly slice red onion and soak in cold water for 10 minutes.
- Crumble feta cheese into small pieces.
- In a bowl, whisk together olive oil, lemon juice, salt, and pepper to make the dressing.
- In a large bowl, combine all veggies with crumbled feta. Drizzle dressing over the top and toss gently until evenly coated.
