Ingredients

  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Wash and prepare all vegetables: dice cucumber and halve cherry tomatoes.
  2. Thinly slice red onion and soak in cold water for 10 minutes.
  3. Crumble feta cheese into small pieces.
  4. In a bowl, whisk together olive oil, lemon juice, salt, and pepper to make the dressing.
  5. In a large bowl, combine all veggies with crumbled feta. Drizzle dressing over the top and toss gently until evenly coated.
  6. Chill in the fridge for about 30 minutes before serving.
