Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Drain and rinse the chickpeas in a colander.
  2. 2. Dice the cherry tomatoes, cucumber, and red onion into bite-sized pieces.
  3. 3. In a large bowl, combine chickpeas and diced veggies. Add chopped parsley.
