Ingredients

  • Fresh raspberries
  • Mascarpone cheese
  • Ladyfinger cookies
  • Strong coffee
  • Granulated sugar
  • Unsweetened cocoa powder
  • Pure vanilla extract

Instructions

  1. Brew 1 cup of strong coffee and let it cool.
  2. In a large bowl, mix mascarpone cheese, sugar, and vanilla extract until smooth and creamy.
  3. Quickly dip each ladyfinger into the cooled coffee and arrange them in a baking dish.
  4. Spread half of the mascarpone mixture over the ladyfingers, then layer with fresh raspberries.
  5. Repeat the layers with remaining ladyfingers and mascarpone mixture, finishing with more raspberries on top.
  6. Cover and refrigerate for at least 4 hours (or overnight). Dust with cocoa powder before serving.
