  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs)
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 tsp fresh rosemary or thyme, chopped
  • 1 tbsp lemon juice (freshly squeezed)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Pat the chicken thighs dry with paper towels.
  2. In a bowl, mix olive oil, minced garlic, salt, pepper, and lemon juice. Coat the chicken thighs in this mixture.
  3. Heat a cast-iron skillet over medium-high heat. Sear the chicken thighs skin-side down for 5–7 minutes until golden brown.
  4. Transfer the skillet to the preheated oven and roast for 25–30 minutes until the internal temperature reaches 165°F (74°C).
  5. Let the chicken rest for at least 5 minutes before serving. Garnish with fresh herbs.
