  • 1 small onion, diced
  • 4 large eggs
  • 1 cup heavy cream (or half-and-half)
  • 1 cup shredded sharp cheddar cheese (or Gruyère)
  • 1 pre-made pie crust
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté diced onions until translucent. Add diced zucchini and cook until tender, about 5-7 minutes. Season with salt and pepper.
  3. In a mixing bowl, whisk together eggs, heavy cream, salt, and pepper until smooth.
  4. Fold in the sautéed vegetables and half of the cheese into the egg mixture.
