Description

Zucchini lasagna is a healthy and delicious twist on the traditional Italian dish, perfect for satisfying cravings without the carbs. Ingredients

  • 3 medium zucchinis (sliced lengthwise into 1/8-inch strips)
  • 15 oz ricotta cheese
  • 1 large egg
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • ¼ cup fresh basil (chopped)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice zucchini into thin strips using a mandoline or sharp knife.
  3. In a bowl, combine ricotta cheese, egg, salt, pepper, and half of the chopped basil; mix until smooth.
  4. Spread a layer of marinara sauce in a baking dish. Layer zucchini strips, ricotta mixture, and mozzarella cheese; repeat until ingredients are used up.
  5. Top with remaining marinara sauce, mozzarella, and parmesan cheese.
  6. Bake for approximately 45 minutes until golden and bubbly. Allow to cool slightly before slicing.
