  • 1 cup cream cheese, softened
  • 2/3 cup granulated sugar (plus more for topping)
  • 2 large eggs, room temperature
  • 1 tablespoon vanilla bean seeds (from about 2 vanilla beans)
  • 1/2 cup all-purpose flour, sifted
  • 1/4 cup unsalted butter, melted
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven to 325°F (163°C) and line a cupcake pan with liners.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  3. Scrape vanilla bean seeds into the mixture and combine. Gradually sift in flour and mix gently until just combined.
  4. Spoon batter into liners until two-thirds full. Bake for 20-25 minutes or until slightly jiggly in the center.
  5. Cool completely before refrigerating for at least an hour to firm up the filling.
  6. Sprinkle coarse sugar on top of each cupcake and caramelize using a kitchen torch until golden brown.
