  • 4 medium sweet potatoes (about 2 lbs)
  • 4 tablespoons unsalted butter
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup mini marshmallows (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Bake sweet potatoes on a lined baking sheet for 45-60 minutes until tender.
  3. Allow to cool slightly, then slice in half lengthwise and scoop out the flesh into a bowl, leaving some around the edges.
