Ingredients

  • 1 cup strong espresso (cooled)
  • 2 tablespoons granulated sugar (for coffee)
  • 3 large egg yolks
  • ½ cup granulated sugar (for mascarpone mixture)
  • 1 cup mascarpone cheese
  • 3 large egg whites
  • 24 ladyfingers
  • Unsweetened cocoa powder (for dusting)
  • 1 teaspoon vanilla extract

Instructions

  1. Brew the strong espresso and mix in 2 tablespoons of sugar until dissolved. Allow to cool.
  2. In a bowl, whisk together egg yolks and ½ cup sugar until pale and fluffy. Add mascarpone cheese and mix until smooth.
  3. In another bowl, beat egg whites until stiff peaks form; gently fold into the mascarpone mixture.
  4. Quickly dip each ladyfinger into the cooled coffee mixture for about one second.
  5. Layer half of the soaked ladyfingers in a dish, top with half of the mascarpone mixture, and repeat.
  6. Cover and refrigerate for at least 4 hours or overnight for best flavor.
