  • 2 cups day-old jasmine rice
  • 1 cup mixed vegetables (bell peppers, peas, carrots)
  • 2 large eggs, lightly beaten
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp fresh lime juice
  • 2 green onions, chopped
  • 1 cup cooked protein (optional: chicken, shrimp, or tofu)
  • 2 tbsp cooking oil

Instructions

  1. Rinse jasmine rice until water runs clear; cook with 2 cups water in a pot over low heat for 15 minutes.
  2. Heat oil in a skillet over medium-high heat. Sauté mixed vegetables for 3-5 minutes; push to the side.
  3. Scramble eggs on the cleared side until fully cooked.
  4. Combine cooked rice with sautéed veggies and eggs; add soy sauce and lime juice. Stir for 2-3 minutes.
