  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 1 cup bell peppers (any color), chopped
  • 1 cup pineapple chunks (fresh or canned)
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp cornstarch mixed with 2 tbsp water
  • 3 tbsp sugar
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • 1/4 cup ketchup
  • 1/4 cup water
  • Pinch of black pepper

Instructions

  1. Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
  2. Heat vegetable oil in a large skillet over medium-high heat. Cook chicken until golden brown, about 5-7 minutes. Remove chicken from skillet.
  3. In the same skillet, sauté minced garlic and chopped bell peppers for about 3 minutes until softened.
  4. In a bowl, whisk together soy sauce, ketchup, rice vinegar, sugar, cornstarch-water mixture, and black pepper. Pour into skillet with vegetables.
  5. Return chicken to the skillet; stir until the sauce thickens and becomes glossy, about 5 minutes.
  6. Add pineapple chunks just before serving; warm through for an additional minute.
