- 1 cup cooked rice (white or brown)

- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and lightly spray a baking dish with non-stick cooking spray.
- Cut the tops off the bell peppers and remove the seeds to create hollow bowls.
- In a skillet over medium heat, sauté diced onion until translucent (about 5 minutes). Add minced garlic and cook until fragrant (about 1 minute).
- Add ground turkey to the skillet, cooking until browned (about 6-8 minutes). Drain excess fat if necessary.
- In a large bowl, combine the meat mixture with cooked rice, half of the mozzarella cheese, Italian seasoning, salt, and pepper.
- Stuff each pepper generously with the filling mixture. Place upright in the baking dish and top with remaining mozzarella cheese.
- Bake for about 30 minutes or until peppers are tender and cheese is bubbly.
