  • 4 large bell peppers (red, yellow, or green)
  • 1 pound ground beef (or turkey)
  • 1 cup cooked white or brown rice
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • 1 tsp cumin (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Slice tops off bell peppers and remove seeds. Chop the tops for filling if desired.
  3. In a skillet over medium heat, sauté onion and garlic until fragrant. Add ground meat and cook until browned. Stir in diced tomatoes and cooked rice; season with salt, pepper, and cumin.
  4. Generously fill each pepper with the mixture and place upright in the baking dish.
  5. Top with shredded cheese; cover loosely with aluminum foil.
  6. Bake for 25-30 minutes until peppers are tender and cheese is bubbly.
