  • 1 lb ground beef (or turkey/chicken)
  • 1 cup cooked rice (white or brown)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste
  • 1 tsp Italian seasoning (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash bell peppers; slice off tops and remove seeds.
  3. In a skillet over medium heat, sauté onions and garlic until fragrant. Add ground meat and cook until browned.
  4. Stir in cooked rice, diced tomatoes, salt, pepper, and Italian seasoning; mix well.
  5. Fill each pepper with the mixture; top with cheese if desired.
  6. Place stuffed peppers upright in a baking dish with a splash of water at the bottom. Cover with foil and bake for 30-35 minutes until tender.
