  • 4 medium bell peppers (red, yellow, or green)
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 tbsp olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with nonstick spray.
  2. Prepare the bell peppers by cutting off the tops and removing seeds.
  3. In a skillet over medium heat, add olive oil. Cook the diced chicken until golden brown. Stir in onions and garlic until fragrant.
  4. In a large bowl, combine the chicken mixture with cooked rice, Italian seasoning, half of the cheese, salt, and pepper.
  5. Generously stuff each bell pepper with the mixture and place them upright in the baking dish.
  6. Cover with foil and bake for 30 minutes. Remove foil, sprinkle remaining cheese on top, and bake for an additional 10 minutes until bubbly.
