  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 2 cups fresh strawberries, sliced
  • 2 tbsp powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  2. In a large bowl, beat cream cheese until smooth. Gradually mix in sugar until fully combined.
  3. Stir in sour cream and vanilla extract until well blended.
  4. Pour the cheesecake filling over the crust and bake for 50-60 minutes until set but slightly jiggly in the center.
  5. Cool at room temperature before refrigerating for at least four hours or overnight.
  6. Top with sliced strawberries and dust with powdered sugar before serving.
