  • 1 lb flank steak, cut into bite-sized pieces
  • 1 cup long-grain white rice
  • 1 cup creamy queso cheese
  • 1 cup bell peppers, chopped (any color)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by cutting steak into pieces, chopping vegetables, and mincing garlic.
  2. In a large skillet over medium-high heat, add olive oil and sear the steak until golden brown (about 5 minutes). Season with salt and pepper. Remove from skillet.
  3. In the same skillet, sauté onions and bell peppers until softened (about 4 minutes). Add minced garlic for the last minute.
  4. Return the steak to the skillet along with cooked rice, chili powder, and cumin. Mix well until heated through (about 2 minutes).
  5. Stir in queso cheese until melted and combined (about 3 minutes).
  6. Serve hot, garnished with fresh herbs if desired.
