  • 1 lb sirloin steak, diced
  • 1 cup queso cheese
  • 1 cup long-grain white rice
  • 1 cup bell peppers, diced (mix of red, green, and yellow)
  • 1 medium onion, diced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp fresh cilantro, chopped

Instructions

  1. Prep your ingredients by dicing the steak, onion, and bell peppers.
  2. In a large skillet over medium-high heat, add oil and brown the steak for about 5-7 minutes until seared.
  3. Remove the steak and sauté onions and bell peppers in the same skillet until softened.
  4. Stir in uncooked rice with spices and toast briefly before adding liquid.
  5. Add water or broth; bring to a boil then reduce heat to low. Cover and simmer for 15-20 minutes until rice is tender.
  6. Fold in cooked steak and queso cheese until creamy; warm through on low heat before serving.
  7. Garnish with fresh cilantro.
