  • 1 cup warm water
  • 1 lb pork shoulder, ground
  • 1 cup homemade chicken broth (gelatinized)
  • 1 tbsp fresh ginger, grated
  • 2 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 2 green onions, finely chopped
  • Salt & pepper to taste

Instructions

  1. Make the Dough: In a large bowl, mix flour and warm water until a shaggy dough forms. Knead for about 10 minutes until smooth and elastic.
  2. Prepare the Filling: Combine ground pork, ginger, green onions, soy sauce, sesame oil, salt, and pepper in another bowl until well mixed.
  3. Create Chicken Broth Gelatin: Simmer chicken broth until reduced by half. Cool slightly and pour into a shallow dish; refrigerate until set.
  4. Shape the Dumplings: Roll out small pieces of dough into thin circles. Place about 1 tablespoon of filling and a small piece of broth gelatin in each circle.
  5. Seal the Dumplings: Pinch edges together to form pleats and ensure they are tightly sealed.
  6. Steam: Arrange dumplings on parchment-lined steamer and steam over boiling water for 8-10 minutes or until cooked through.
