Description

  • 1 lb shrimp (peeled and deveined)
  • 1 cup stone-ground grits
  • 4 cups water
  • 2 tbsp butter (divided)
  • ½ cup heavy cream
  • 2 cloves garlic (minced)
  • 1 cup sharp cheddar cheese (shredded)
  • 2 green onions (chopped)
  • Hot sauce (to taste)
  • Salt and pepper (to taste)

Instructions

  1. In a pot, bring 4 cups of water to a boil. Slowly stir in 1 cup of grits, mixing continuously to avoid lumps.
  2. Reduce heat and simmer for about 20 minutes until thickened; stir occasionally, adding 2 tbsp butter and ½ cup heavy cream halfway through.
  3. In a skillet, melt remaining 2 tbsp butter over medium heat and sauté minced garlic until fragrant. Add shrimp seasoned with salt and pepper; cook for 2-3 minutes per side until pink.
  4. Mix in chopped green onions just before removing from heat.
  5. Once grits are creamy, stir in cheddar cheese until melted. Serve by spooning grits into bowls topped with sautéed shrimp and drizzle with hot sauce.
