- 2 green onions (chopped)
- Hot sauce (to taste)

Instructions
- In a pot, bring 4 cups of water to a boil. Slowly stir in 1 cup of grits, mixing continuously to avoid lumps.
- Reduce heat and simmer for about 20 minutes until thickened; stir occasionally, adding 2 tbsp butter and ½ cup heavy cream halfway through.
- In a skillet, melt remaining 2 tbsp butter over medium heat and sauté minced garlic until fragrant. Add shrimp seasoned with salt and pepper; cook for 2-3 minutes per side until pink.
- Mix in chopped green onions just before removing from heat.
- Once grits are creamy, stir in cheddar cheese until melted. Serve by spooning grits into bowls topped with sautéed shrimp and drizzle with hot sauce.
