  • 2 large eggs
  • 1/2 cup whole milk (or almond/oat milk)
  • 1/4 cup melted butter (optional)
  • 1 cup cheese (cheddar or feta), shredded
  • 1/4 cup fresh herbs (parsley or chives), chopped
  • 1 cup vegetables (spinach or bell peppers), sautéed

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat eggs and mix in milk and melted butter if desired.
  4. Gently combine wet ingredients with dry ingredients until just mixed; avoid overmixing.
  5. Fold in cheese, herbs, and sautéed vegetables.
  6. Spoon batter into muffin cups, filling each about 3/4 full.
  7. Bake for 20-25 minutes until golden brown; a toothpick should come out clean.
  8. Allow to cool slightly before serving.
