  • 1 whole chicken (45 lbs)
  • 2 tbsp extra virgin olive oil
  • 2 tsp garlic powder
  • 2 tsp smoked paprika
  • 1 tbsp dried oregano (preferably Mediterranean)
  • 1 tsp salt
  • 1/2 tsp freshly cracked black pepper
  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken dry with paper towels.
  3. In a small bowl, mix olive oil, garlic powder, smoked paprika, oregano, salt, pepper, and lemon juice to form a paste.
  4. Rub the seasoning mixture all over the chicken, including under the skin.
  5. Place the chicken breast-side up in a roasting pan.
  6. Roast for approximately 1 hour and 20 minutes until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
  7. Let it rest for at least 15 minutes before carving.
