  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs (room temperature)
  • 1 tbsp red gel food coloring
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 8 oz full-fat cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a mixing bowl, melt the butter and mix in granulated and brown sugars until smooth. Add eggs one at a time, mixing well after each addition.
  3. Stir in red food coloring and vanilla extract until combined. Sift in flour and cocoa powder, folding gently until no dry streaks remain.
  4. In another bowl, beat cream cheese until fluffy. Gradually add powdered sugar and heavy cream, mixing until smooth.
  5. Pour half of the brownie batter into the prepared pan. Spoon dollops of cheesecake mixture over it and swirl with a knife. Pour remaining brownie batter on top.
  6. Bake for 25-30 minutes or until a toothpick inserted comes out mostly clean. Allow to cool completely before cutting into squares.
