  • 8 oz penne pasta
  • 2 large red bell peppers
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Halve the red peppers and remove seeds. Place them on a baking sheet, cut-side down, and roast until the skins blister and blacken.
  2. In a large skillet over medium heat, add olive oil and sauté minced garlic for 1-2 minutes until golden brown.
  3. Once roasted, let the peppers cool slightly. Peel off the skins and blend them with heavy cream until smooth.
  4. Cook the penne according to package instructions until al dente; drain but reserve some pasta water.
  5. Add the creamy red pepper mixture to the skillet with garlic, then add drained pasta. Toss gently over low heat, adding reserved pasta water if needed for consistency.
  6. Stir in freshly grated Parmesan cheese until melted and season with salt and pepper before serving hot.
