  • 1/2 cup brown sugar
  • 1 large egg (room temperature)
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, mix together pumpkin puree, granulated sugar, brown sugar, egg, and vanilla extract until smooth.
  3. In another bowl, sift together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture until just combined. If using chocolate chips, fold them in gently.
  5. Drop spoonfuls of dough onto prepared baking sheets about 2 inches apart.
  6. Bake for 12-15 minutes until edges are golden but centers remain soft.
  7. Allow cookies to cool on the sheets for 5 minutes before transferring to wire racks.
