Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, beat pumpkin puree, brown sugar, granulated sugar, eggs, and vanilla until smooth.
  4. Gradually combine the dry ingredients with the wet mixture until just mixed; do not overmix.
  5. Fold in chocolate chips if using.
  6. Drop tablespoons of dough onto prepared sheets and bake for 10-12 minutes until edges are golden but centers remain soft.
  7. Cool on baking sheets before transferring to wire racks.
