  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 2 cups fresh pineapple chunks or canned
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 green onions, chopped (for garnish)
  • 1/4 cup pineapple juice (100% juice)
  • 1 tsp red pepper flakes (optional)

Instructions

  1. Rinse and pat dry the chicken breasts.
  2. In a bowl, whisk together soy sauce, brown sugar, minced garlic, and pineapple juice.
  3. Place the chicken in the crockpot and pour the sauce mixture over it. Add pineapple chunks on top.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
