  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup basil pesto
  • 8 oz fresh mozzarella cheese, sliced
  • 4 ciabatta rolls
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper.
  2. In an oven-safe skillet over medium-high heat, add olive oil. Sear the chicken for 4-5 minutes per side until golden brown.
  3. Spread basil pesto on each chicken breast and top with mozzarella slices. Transfer the skillet to the oven and bake for 15-20 minutes until the internal temperature reaches 165°F (75°C).
  4. While baking, slice ciabatta rolls and toast them lightly.
  5. Assemble by placing the cheesy pesto chicken on one half of the toasted ciabatta and add desired toppings.
