Description

  • 1 cup granulated sugar
  • 1 tsp baking powder

  • 2 large eggs

  • 1/2 cup sour cream
  • 1/4 cup honey
  • 2 ripe peaches, sliced (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time followed by vanilla extract.
  4. Gradually mix in dry ingredients until just combined.
  5. In another bowl, blend softened cream cheese with sour cream and honey until smooth.
  6. Spoon batter into liners, add cheesecake filling, and top with more batter until two-thirds full.
  7. Bake for 20-25 minutes or until golden brown; let cool completely before adding peach slices and honey drizzle.
