  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 cup unsalted butter (room temperature)
  • 4 large eggs
  • 1 cup whole milk (or almond/oat milk)
  • 2 tsp pure vanilla extract
  • 1 cup strawberry puree (freshly blended)
  • Chocolate frosting (store-bought or homemade)
  • Whipped cream (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease three 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, baking powder, cocoa powder, and salt until blended.
  3. Add softened butter, eggs, milk, and vanilla to the dry ingredients. Mix on medium speed until smooth and fluffy.
  4. Divide the batter into three bowls: leave one as vanilla, mix strawberry puree into the second, and add cocoa powder to the third for chocolate.
  5. Pour each batter into greased pans and bake for 25-30 minutes. Check with a toothpick; it should come out clean.
  6. Let cakes cool in pans for about 10 minutes before transferring them to wire racks to cool completely.
  7. Assemble by layering chocolate, vanilla, and strawberry cakes with frosting in between each layer.
