  • 1 lb ground beef (lean and fatty blend)
  • 1 cup breadcrumbs (fresh or seasoned)
  • 1 large egg
  • 1 medium onion (finely chopped)
  • 2 lbs Yukon Gold potatoes (peeled and chopped)
  • 4 tbsp butter
  • ½ cup milk or cream
  • Salt and pepper to taste
  • Fresh herbs (parsley) for seasoning

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, egg, finely chopped onion, garlic powder, salt, pepper, and fresh herbs until just mixed. Avoid overmixing.
  2. Shape the mixture into golf ball-sized meatballs and place on a lined baking sheet.
  3. Preheat oven to 375°F (190°C) and bake meatballs for 20-25 minutes until golden brown.
  4. Meanwhile, boil chopped potatoes in salted water for about 15 minutes until fork-tender.
  5. Drain potatoes, return to pot, add butter and milk/cream, then mash until smooth. Season with salt and pepper.
  6. Serve meatballs alongside mashed potatoes; enjoy!
