  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 4 cloves fresh garlic, minced
  • 8 oz fettuccine or penne pasta
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. 1. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken for about 5 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  2. 2. In the same skillet, add minced garlic and sauté for about a minute until fragrant.
  3. 3. Pour in heavy cream and chicken broth; stir well while scraping the bottom of the skillet. Add thyme and oregano.
  4. 4. Gradually stir in Parmesan cheese until melted and smooth.
  5. 5. Add cooked pasta to the sauce, tossing to coat evenly. If needed, add more chicken broth for consistency.
  6. 6. Slice chicken and place over pasta; drizzle with extra sauce if desired.
