- 2 ripe mangoes, peeled and chopped
- 1/2 cup small sago pearls
- 1 cup full-fat coconut milk
- 3 cups filtered water
- 1/4 cup sugar (adjust to taste)

Instructions
- Rinse the sago pearls under cold water until clear. Soak in water for 30 minutes.
- In a pot, bring 3 cups of water to a boil. Add soaked sago pearls and cook for 10-15 minutes until translucent, stirring occasionally. Drain excess water.
- Blend the chopped mangoes into a smooth puree, reserving half for topping.
- In another saucepan, combine coconut milk, sugar, and salt over low heat until sugar dissolves—do not let it boil.
- Mix cooked sago into the coconut milk mixture off heat and fold in half of the mango puree.
- Pour into serving bowls and refrigerate for at least one hour. Top with reserved mango puree before serving.
